Recipe - Pear Muffins

Recipe - Pear Muffins

My neighbour gave me LOTS of pears from his pear tree.

So I googled for some recipes.

And decided on pear muffins, but found 2-3 that sounded good.

So I took bits of each of them and made my own!

PEAR MUFFINS

Ingredients:
2 cups all purpose flour
1/3 cup sugar or brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 egg, beaten
1 cup milk
1 1/2 tsp vanilla
2-3 cups of mashed or finely chopped pears
1-2 tsp lime juice

Heat oven to 400 degrees.
I made my own paper liners for the muffin cups using this tutorial.
Line your muffin cups.
Spray the paper liners with a quick spray of nonstick cooking spray.

In large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg & salt.
In a medium bowl, combine the beaten egg, milk and vanilla.  Add the pears and stir.

Add the wet ingredients to the dry, and mix.

Spoon the batter into the muffin cups.

Bake for 15 minutes or until a toothpick inserted comes out clean.

Ta da!  
Used up all the pears!!
Made 4 batches in total!

  1. The cupcakes look yummy - thank you for sharing your recipe. I really appreciate the tip (and the link to the tutorial) about using baking parchment paper to form handmade cupcake pan liners. Several times I had wanted to bake cupcakes but found I didn't have any of those paper cups in my pantry. And I always seem to forget to pick some up when I'm at the grocery store . . . however I do have a roll of parchment paper in my pantry. :)
